This rainbow trout is poly modelled in relatively high poly count. What makes the model good is its meticulously illustrated texture maps which are based on scans from photographs of a real fish. The model has, for posing the model, basic bend modifiers on all parts so if you want to do more serious animation you might have to still rig it.
